During the best of times, running a restaurant is hard and risky work.
During a pandemic, it takes extra ingenuity and determination.
Salute Ristorante is a success because the owners are constantly reinventing the dining experience, recently moving tables outdoors and soon opening for lunch.
In 1978, as a young man of 20, Vincenzo took a ride on a whim and applied for a job with Resorts in Atlantic City. Before he got home to Trenton, chef Ted had called and left a message for him to call back. He was hired right then and there.
When he asked, ‘when do I start?,’ he was told ‘tomorrow.’ Vince told the chef he didn’t have a place to live, and the chef replied, “You’ll live with me until you find a place.”
Post Atlantic City, Vince opened Vincenzo Pizza in Ewing in addition to working for other restaurants in the Mercer County area.
By 1993, Vince and his future wife Kathleen opened the Avanti restaurant in Pennington in a building that had housed the Book Peddler bookstore owned by Chris McManimon.
Chris and Ed McManimon were instrumental in giving the couple a great start and were there to support them all the way!!
Avanti was sold in 2014 followed by a brief hiatus until the opening of Salute in Morrisville. Many Avanti customers have followed, including the McManimon family.
As with everyone else COVID-19 has left a mark.
Vince and Kathleen as well as the staff work to keep everyone safe while enjoying a great meal. It has been a struggle to keep the many items on the menu that our customers look forward to having, as well as satisfying special requests when possible.
The daily specials are part seasonal, part imagination part favorites. Salute will be offering lunch from 11:30am to 2:00pm, beginning September 15th—another sign of things returning to normal.
In today’s environment, it is comforting to see the people returning to their traditions, including favorite restaurants and meals that they were away from for so long.

Dinner hours are Wednesday through Saturday, 4:00 to 8:00pm. Lunch 11:30am to 2:00pm, beginning September 15th.
