Mercy Ingraham, an expert in open hearth cooking, will be speaking about historic cooking techniques. You may have seen Mercy’s skills on display at the annual NHA Holiday Open House Tour or Market Day. She has been published in Early American Life and is the author and co-author of several books on Colonial Cookery. Come and learn about the differences between 21st century cooking and that of the 18th century. Mercy will share cooking techniques for cooking chicken on a string, making flatbread baked on the coals of the fire and other specialties.
